I made the cookies yesterday - fabulous! Just ate another one with my morning coffee. This could be a problem ;-) I better get the rest of the batch into the freezer ASAP.
My husband makes Saag Paneer for me. Spinach (or other dark green) cooked with frish ginger, onion, garlic, a little chile, homemade garam masala, coriander, and cumin. The spices are cooked slowly and well with the onion, when the spinach added. He adds a little yogurt to make it a bit creamy. And adds slightly browned paneer. I usually minimize dairy. In Saag Paneer I get to appreciate it once in a while.
This sounds so delicious, both full of good, wholesome foods and plenty of spice. I haven't made saag paneer in a very long time but I know the key is taking patience to caramelize the onions for a long time. A true labor of love!
