Question about the MIND diet score sheet- For the beans is it 31/2 cups 3x/week, or (3) 1/2 cup servings /wk?

I’ve been anxiously awaiting the publication of your book and I’m devouring it since receiving. The information is just as fascinating as the recipes! I have a question about the Crispy Cauliflower Tacos recipe on p. 136. I can’t seem to find the recipe for the Creamy Red Pepper Sauce that accompanies it. Will you point me to it?

Here's how to make it using the Almost Instant Cashew Cream method from the book:

Combine 1 ¼ cups Almost Instant Cashew Cream, 1 large garlic clove, 1 cup roasted and peeled sweet red peppers (from a jar), and 1 tablespoon chopped chipotles in adobo (from a can) in a blender. Blend on high until smooth. The sauce keeps in the refrigerator for up to 1 week.

Hi Annie,

Received my BHK book yesterday! It is just wonderful.

In terms of avoiding cheese (per the MIND Diet graphic), is fat-free cheese/milk/yogurt an acceptable alternative? Calcium a concern and is better absorbed through diet than supplements. Thanks!

This is a great question.

I am not a fan of low fat dairy unless it has been recommended to you by your physician (usually due to high LDL cholesterol). Of the dairy products listed, yogurt provides the best complement of brain health nutrients, plus has easily digestible protein and calcium.

To make sure you are getting enough calcium focus on non-dairy foods like cruciferous vegetables (broccoli, etc), tiny fish (sardines, anchovies), dark leafy greens (kale, spinach, collards), winter squash, edamame, and almonds. Once cup of bok choy, for example, has more calcium than one cup of milk, and the body absorbs it better (50% vs 30% for most dairy).

If you are keeping up with the MIND diet or BHK guidelines, I think you will be covered for calcium.

(The darkest greens--spinach, kale, and the like--are not an option due to my heriditary high-ish iron levels...sorry for the overshare. )
